My pool is approximately 48k gallons. There is a failing Pentair ic60 currently. Is the 60 sufficient or, if there is a way, would 2 40’s be a better option?

Speaking generally, having more capacity is a major benefit and advantage. Another solution if you're going to add a system and are focused on getting extra capacity, one solution might be a 60k cell to work with what you have and then adding an ozone generator.
